1 Cup milk 1 cup cooked rice, cooled 2 eggs, separated 1 tablespoon melted butter or margarine 1/2 teaspoon each vanilla, salt and cinnamon 1 cup, less 2 tablespoons all-purpose flour 1/3 cup raisins Orange marmalade sauce |
In a large bowl mix milk, rice, egg yolks, butter, vanilla, salt, and cinnamon until thoroughly blended. Sprinkle flour over rice mixture and mix to blend thoroughly.
In another bowl beat egg whites until stiff peaks form and fold into rice mixture. Gently mix in raisins. On a hot, greased griddle or a skillet over medium heat, bake 1/4 cup full until browned, turning once. Grease griddle and repeat as necessary. Serve hot with Orange Marmalade Sauce. Makes 12 griddle cakes Orange Marmalade Sauce: in a small saucepan over low heat, stir 1/2 cup orange marmalade until melted. Add 1/4 cup butter or margarine and 1/2 cup orange juice. Stir until butter is melted. Serve slightly warm. Makes about 1 cup |
